Lemon Green Beans



It doesn't get much easier than this. Use fresh beans, not frozen.

Ingredients 

  • 4 cups of fresh green beans. Yellow or a mix work well, too.
  • 1 tablespoon olive oil
  • 1 lemon
  1. Boil salted water in a medium to large pot. 
  2. Trim ends off beans and wash. 
  3. Zest lemon into bowl. Then squeeze lemon juice into same bowl. Add olie oil and whisk to combine. 
  4. Add beans to rapidly boiling water. Turn down heat to maintain a boil. Boil 2 minutes and strain.
  5. Add strained beans back to pot, let moisture slightly evaporate, and add lemon/oil mixture. 
Serves 4

Recipe Notes

  • Cooking the beans briefly in boiling water (which is called blanching) preserves their colour and nutrients and gives them a nice fresh crunch.  If you prefer, you can steam them, but blanching is quicker and simpler in my opinion. 
  • Trimming beans is tedious work. You can buy trimmed beans, but they are quite a bit more expensive. My suggestion is to just do it yourself. Do a whole bunch and save some in a freezer bag in the fridge for later. They'll keep for a week, provided you don't wash them before placing in bag.
