Lemon Green Beans
It doesn't get much easier than this. Use fresh beans, not frozen.
Ingredients
- 4 cups of fresh green beans. Yellow or a mix work well, too.
- 1 tablespoon olive oil
- 1 lemon
- Boil salted water in a medium to large pot.
- Trim ends off beans and wash.
- Zest lemon into bowl. Then squeeze lemon juice into same
bowl. Add olie oil and whisk to combine.
- Add beans to rapidly boiling water. Turn down heat to
maintain a boil. Boil 2 minutes and strain.
- Add strained beans back to pot, let moisture slightly
evaporate, and add lemon/oil mixture.

Recipe Notes
- Cooking the beans briefly in boiling water (which is called
blanching) preserves their colour and nutrients and gives them a nice
fresh crunch. If you prefer, you can steam them, but
blanching is quicker and simpler in my opinion.
- Trimming beans is tedious work. You can buy trimmed beans,
but they are quite a bit more expensive. My suggestion is to just do it
yourself. Do a whole bunch and save some in a freezer bag in the fridge
for later. They'll keep for a week, provided you don't wash them before
placing in bag.
