Beef and Broccoli Orange Stir-fry



What a flavourful dish! I use only fresh ingredients, no frozen vegetables. You can experiment with different veggies for variety.

Ingredients

  • 1 lb lean round steak, cut across the grain into very thin strips about 1 1/2" long
  • 1/2 cup white or yellow onion, diced
  • 2 cups fresh broccoli florets in bite-sized pieces
  • 1 red pepper, cut into long thin strips
  • Juice and zest of one orange
  • 4 TB tamari soy sauce (tamari is preferred, but may substitute regular soy sauce if you can't find it)
  • 2 cloves of garlic, finely minced
  • 1 TB of maple syrup (or honey)
  • 1 TB of whole-wheat flour
  1. Combine orange juice, soy sauce, maple syrup, and flour in small container with tight fitting lid and shake vigorously until flour is dissolved.
  2. Heat large, heavy non-stick skillet over high heat for one minute. Reduce heat to medium-high, mist with cooking spray, and add steak strips. Stir frequently and cook through, about 3 minutes. Remove steak from pan and cover to keep warm.
  3. Add more cooking spray and add onion and broccoli. Cook for 2 minutes. Add pepper and garlic and cook 3 more minutes or until vegetables begin to soften, but still have some crunch.  
  4.  Add steak back to pan, give orange-soy mixture another quick shake, and add to skillet. Cook for a minute or two until sauce begins to thicken. Stir all to combine. 
  5. Serve on plate, sprinkled with orange zest, along-side quinoa with roasted peanuts or brown rice.

Recipe Notes

  • This stir-fry still tastes excellent the next day. Simply heat up in microwave. I promise you your family won't complain about eating left-overs.  
  • As for the orange, zest the orange first. Then, to get maximum juice out of the orange, beat it up a bit. A few good bangs on the cutting board, pressing on it and rolling it around while pushing on it will break the inner membranes and release more juice. You can also zap it in the microwave for 20-30 seconds. 
  • You can add the zest in step 1 if you like, but I prefer to sprinkle it at the end because it gives it that extra fresh look.
