Balsamic Green Beans



Very simple and delicious.

Ingredients 

  • 4 cups of fresh green beans. Yellow or a mix work well, too. Don't use frozen
  • 1 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
  • 1 garlic clove finely minced. 
  1. Boil salted water in a medium to large pot. 
  2. Trim ends off beans and wash. 
  3.  Add beans to rapidly boiling water. Turn down heat to maintain a boil. Boil 2 minutes and strain.
  4. Meanwhle, pour oil in frying pan on medium heat and add minced garlic. Cook for about 1 minute until garlic is fragrant. Add balsamic vinegar and bring to a quick boil. 
  5. Add strained beans to pan, stir to coat with dressing, and it's ready to serve.

Recipe Notes

  • Cooking the beans briefly in boiling water (which is called blanching) preserves their colour and nutrients and gives them a nice fresh crunch.  If you prefer, you can steam them, but blanching is quicker and simpler in my opinion. 
  • Trimming beans is tedious work. You can buy trimmed beans, but they are quite a bit more expensive. My suggestion is to just do it yourself. Do a whole bunch and save some in a freezer bag in the fridge for later. They'll keep for a week, provided you don't wash them before placing in bag.
