4 cups of fresh green beans. Yellow or a mix work well, too. Don't use frozen
1 tablespoon olive oil
2 tablespoons balsamic vinegar
1 garlic clove finely minced.
Boil salted water in a medium to large pot.
Trim ends off beans and wash.
Add beans to rapidly boiling water. Turn down heat to
maintain a boil. Boil 2 minutes and strain.
Meanwhle,
pour oil in frying pan on medium heat and add minced garlic. Cook for
about 1 minute until garlic is fragrant. Add balsamic vinegar and bring
to a quick boil.
Add strained beans to pan, stir to coat with dressing, and it's ready to serve.

Recipe Notes
Cooking the beans briefly in boiling water (which is called
blanching) preserves their colour and nutrients and gives them a nice
fresh crunch. If you prefer, you can steam them, but
blanching is quicker and simpler in my opinion.
Trimming beans is tedious work. You can buy trimmed beans,
but they are quite a bit more expensive. My suggestion is to just do it
yourself. Do a whole bunch and save some in a freezer bag in the fridge
for later. They'll keep for a week, provided you don't wash them before
placing in bag.
