Balsamic Glazed Asparagus - Low GI Diet Recipe



This is a very quick and easy sidedish that tastes like fancy restaurant fare. 

Ingredients 

  • 1 bunch asparagus, thoroughly rinsed and tough bottoms (about 1") cut off
  • 3 tablespoons balsamic vinegar 
  • Salt and freshly ground pepper
  1. Preheat oven to 350F.
  2. Place asparagus in baking dish. A bread loaf pan works well. Pour vinegard over asparagus and swirl to coat. Season with salt and pepper. 
  3. Bake for 15 minutes. Place oil, 4 TB vinegar, mustard, garlic, salt, pepper, and thyme (if using dried) to a small container with a tight lid and shake well. 
  4. Yes, that's all :-)

Recipe Notes

  • Baking the vinegar will concentrate it more and make it somewhat sirupy, which really brings out the taste. You can boil the vinegar down a bit before using (6 TB boiled down to 3TB) to intensify.
